Pineapple Coconut Smoothie

Makes 2 servings

1/2

cup lite coconut milk, A Taste of Thai®

3/4

cup non-fat milk

1/3 cup pineapple juice, Dole®
1 tablespoon brown sugar
1 can (8-ounce) crushed pineapple, drained, Dole®
1 small banana, chopped
1 container (6-ounce) vanilla yogurt, Dannon Light ’n fit®
1 1/2 cups ice
  Shredded coconut (optional)
  Fresh pineapple spears (optional)

 

  1. Pour all liquid ingredients into blender. Add remaining ingredients, except shredded coconut and pineapple spears. Blend on high for 1 minute or until smooth.
  2. Pour into glasses. Sprinkle coconut on top of each drink (optional), garnish with pineapple spears (optional) and serve with straw.
