8 (1 1⁄2-inch-thick) New York strip steaks
2 tablespoons salt
1 tablespoon ground black pepper
Garnish: fresh parsley sprigs
1. Spray cold grill rack with nonstick nonflammable cooking spray. Preheat grill to medium-high heat (350° to 400°). Sprinkle both sides of steaks evenly with salt and pepper.
2. Grill steaks, covered with grill lid, for 7 to 9 minutes on each side, or to desired degree of doneness. Let stand for 10 minutes before serving. Garnish with fresh parsley, if desired.
