  •  1  container (17-ounce) precooked pork roast, Hormel® 

  •  1⁄4  cup enchilada sauce, Las Palmas® 

  •  1  teaspoon Mexican seasoning, The Spice Hunter® 

  •  8  (6-inch) white corn tortillas, Mission® 

  •  1⁄3  cup chopped onions, Ready Pac® 

  •  2  tablespoons chopped fresh cilantro

  •  1  lime, cut into wedges 

  •   Shredded lettuce

  •   Chopped tomatoes (optional)

Directions

  1. Remove pork roast from package; set aside. In a medium microwave-safe bowl, combine enchilada sauce and Mexican seasoning. Add pork roast. Cover with plastic wrap; microwave on high heat setting (100 percent power) for 4 minutes. Remove and set aside.

  2. Place tortillas on a microwave-safe plate. Cover with moist paper towel; microwave on high heat setting (100 percent power) for 1 minute. Meanwhile, use a fork to shred pork in bowl. Add onion and cilantro. Stir to combine. Divide pork mixture among heated tortillas. Serve tacos with lime, lettuce, and tomatoes (optional).
