Ingredients
½ pound purples potatoes, washed and cut into 1”x 1” pieces
½ pound sweet potatoes, washed and cut into 1”x 1” pieces
½ pound red potatoes, washed and cut into 1”x 1” pieces
1 tablespoon salt
½ cup mayonnaise
½ cup sour cream
2 tablespoon brown mustard
1 tablespoon cider vinegar
1 teaspoon grill seasoning
3 scallions, sliced
Directions
Place the red and sweet potatoes in a large pot and cover with water and add 2 teaspoon of salt. Bring to a light boil over medium heat and boil for 12-15 minutes or until potatoes are tender but still retain and hold their shape. Drain and let cool until just slightly warm.
Place the purple potatoes in a medium pot and cover with water and add 1 teaspoon of salt. Bring to a light boil over medium heat and boil for 10-12 minutes or until potatoes are tender but still retain and hold their shape. Drain and let cool until just slightly warm.
In a large bowl combine remaining ingredients and mix until blended. Add potatoes and gently mix until all the potatoes are completely coated.
