Ingredients

Makes: 8 servings

  • 1 cup sugar

  • 1 tablespoon dried lavender

  • 2 ¾  cups vodka (Smirnoff)

  • ¼ cup crème de cassis

  • 1 tablespoon curacao

  • 1 liter bottle sparkling water, chilled

  • Fresh lavender sprigs, for garnish

Directions

  1. In a small pot over medium heat, dissolve 1 cup sugar in 1 cup water. Bring to a boil, remove from the heat, and stir in the dried lavender. Let sit until cool and strain into a clean jar. (The sugar syrup will keep for 2 weeks in the refrigerator.)

  2. When ready to serve, in a pitcher stir together the vodka, cassis, and half the lavender sugar syrup. (You can adjust the sweetness level to your liking.) Stir a serving portion in a glass filled with ice until well chilled and strain into cold martini glasses, filling them about 3/4 full. Top with sparkling water and garnish with fresh lavender sprigs.
